This bastide town was founded in 1266 on the top of a long and narrow hill by a Cistercian abbey, now disappeared. The road today still goes below the old medieval wooden hall.
Today Gimont is an important centre of the foie gras industry.

|Church of Notre Dame ||Churches|
|Characteristic example of southern Gothic style, the church was built in the 14th century, though the clock tower dates from a later century. Fine tryptych to be seen inside.|
